Another Preserving Day

Since the weather wasn't cooperative today, we turned the day into a productive day inside. We made a quick trip to feed and check on the animals and check on the garden and then off to the kitchen we went. For those of you who know us personally, you know we cook everything we can from scratch, so we make everything in multiples when we cook, so there's one mess to clean up ...


We started the morning with blueberry waffles. They were gone before we could blink! We also made blueberry muffins for tomorrow and 2 loaves of blueberry bread! I left about 2 cups of blueberries for our fresh yogurt later.

We made and put up pizza sauce, spaghetti sauce, tomato juice, bread and butter pickles, and more blackberry pie filling. I still have 2 more batches of blackberries that I'm not sure what they will get made into tomorrow.

For dinner, we made meatloaf out of pork from one our pasture raised pigs. I snuck in some zucchini and peppers from the garden for more veggies. We had our second bunch of corn from the garden and some potatoes with zucchini and peppers broiled to go with!


We did dig our potatoes today because the caterpillars that are attacking my garden saw fit to attack my potatoes as well. I gave as many to the pigs as I have in the bucket due to the holes in them, but at least they did not go to waste! I'm really going to miss them when they eventually have to go. They got a nice big bunch of extras today besides the potatoes. They ate the corn stalks and husks from the corn we pulled today and they got all the veggie scrapes from what we preserved in the kitchen today.


More potatoes will go in after the storm passes this weekend.
